Since it is looking promising that enough interest has generated for Hornady to produce 6x6.8 dies, I have begun pondering a new upper build. What barrel length is optimal for this cartridge? What is the minimum length barrel that would still maintain good velocity for hunting medium, thin skinned game?

18" will work. I would not go below 22".

Nine is good. A ten will handle most things. You don't need an eight.

Ok so while a 22" sounds nice, I'm also thinking about mobility when hunting so 20" seems like a decent compromise. Machine polish, 1x9 twist, light profile with a target crown is what I'm thinking. I've got a standard profile BHW 18" 5.56 and the thing is heavy, I don't see why a light profile won't work and a target crown will cut down on the overall length.

Yes a light profile will help. Ritch has one that is a shooter.

I would go with an 18" Light profile. Another little thing I would do is, thread your barrel and run a thread protector. I wished I had gone this route when I started ordering barrels years ago.
Go with the 1 in 10 twist. Any of the bullets that will fit at magazine length will stabilize with a 10 twist. There is no reason for the 9 twist in a 6X6.8. The only reason Black Hole even made a 9 was because their 6X45 wouldn't stabilize the Nosler 100 grain Ballistic Tip. The 6X6.8 WILL stabilize the 100 grain B.T. with a 10 twist.

Is there a thread protector that actually matches the OD of the barrel and doesn't stick out like a sore thumb?

Yes but I can't remember which ones I bought as mine were for the 223 size. Just look at the specsa nd make sure they give an OD of 750. Even if it's too large you can turn them down pretty easily even using a drill and a file.
