Andre Clouet Champagne Silver Brut Nature Magnum

The Champagne Silver Pas Dosè from the André Clouet winery is a champagne produced using the classic method without dosage and with the AOC Champagne designation. It is produced in Bouzy, on the southern slopes of Reims, a few kilometers from Chouilly, a small and renowned jewel of the Côte des Blancs. Champagne Silver Dosè has a very ancient history, as evidenced by its “Ancient Regime”-style label, a small tribute that underscores the ancient origins of the Clouet family. The company’s domaine extends over ten hectares classified as Grand Cru. The terroir enjoys a dual climatic influence: continental and oceanic. The union of these two variables creates a unique context in the world winemaking panorama: plenty of water, little temperature variation, and abundant sunshine. The soil is chalky, calcareous, and well-drained, a perfect environment for growing Pinot Noir, the Blanc de Noirs par excellence and the absolute protagonist of Champagne Silver Pas Dosé. The winemaking process is characterized by three fundamental principles: attention to detail, tradition, and modernity. Interventions in the vine training are few and well-studied, from green pruning to careful harvesting. In the cellar, the grapes are crushed in an ancient press while the must is collected in modern steel tanks for fermentation with native yeasts. The next stage is a long rest in the pupitres located in the domaine‘s ancient chalky cellars. Finally, manual remuage and dégorgement conclude the winemaking process of a champagne that surprises with its delicate yet well-structured yield.
