Ca del Vent Memoria Brut Pas Opere 2016

A classic method brut sparkling wine from Lombardy, produced by Ca del Vent. 13% ABV, blend of 69% Pinot Noir and 31% Chardonnay, 2016 vintage. A wine made in the heart of the Colline dei Campiani di Cellatica Natural Park, 400 meters above sea level. The term “Pas Operé” indicates topping up at disgorgement with wine from other bottles of the same batch, without added sugar or liqueur d’expedition. Gravity decantation, fermentation with indigenous yeasts, and then aging for 7 months in barrique. Spontaneous and complete malolactic fermentation. No fining, stabilization, or filtration. Secondary fermentation with grape sugar and bottle aging sur lattes for 67 months.
