San Giovanni della Sala is produced by Antinori on the land adjacent to the Castello della Sala, an ancient medieval castle built in 1350 by supporters who came to Italy with Charlemagne with the aim of conquering Orvieto. Given the area’s high vocation for the production of white wines, the Antinori family decided in 1940 to purchase the castle, which had been neglected for decades, and restore it to its former magnificence. On the 170 hectares of land, only white grape varieties are grown, with the sole exception of Pinot Noir, both native and non-native, to be able to express with each wine a modern vision of an ancient terroir. The winery has a modern concept of winemaking and was designed to guarantee quality and freshness in the wines produced, without however damaging the historic cellar already in place. present since the 16th century in the cellars of the fortress.
Antinori San Giovanni della Sala is born from a blend of native grapes, Grechetto and Procanico, with Pinot Bianco and Viognier to produce an Orvieto Classico DOC that expresses a new and unique style. The four vines, grown in a predominantly clayey soil rich in fossil shells, are harvested throughout the month of September. Part of the must is cold macerated in contact with the skins for about 6 hours at around 10°C while the remaining part is pressed. To enhance the characteristics of each variety, the vinification takes place separately in stainless steel tanks at 16°C. The wine is then aged on its own lees for several months to improve its structure and elegance before being blended and bottled. San Giovanni della Sala has been produced since 1990 and is recognized for its intensity, freshness, and fruity explosion on the palate.
