The Very Special Cognac from the House of Hennessy has a lot to say about the history of distillation. Richard Hennessy was an Irish officer in the service of Louis XVI and had the foresight to understand that cognac was destined for commercial success worldwide. Indeed, that was precisely the case. Hennessy founded the eponymous distillery in 1765 and since then it has been a crescendo of successes, receiving acclaim from around the world. The undisputed quality of Hennessy Cognac is confirmed by the 50 million bottles produced each year. Today, the house is part of the LVMH group, along with many other luxury companies. Cognac is a spirit that originates in the French departments of Charente, Charente-Maritime, and partly also in the Dordogne. The grape used to produce it is Ugni Blanc. Ninety-eight percent of the vineyard area is dedicated to growing this highly disease-resistant variety, with low sugar and acidity levels. These are essential characteristics for producing a good distillate. The acronym Cognac V.S. indicates that the distillate has been aged for at least two years. The grapes are harvested and transferred to the cellar for a soft pressing to obtain the base wine. The addition of selected yeasts allows the fermentation to begin. Controlled temperature and the absence of oxygen play an important role. The wine destined for distillation, in fact, must have a minimal amount of alcohol and good acidity. Distillation takes place by March 31st of the year following the harvest. The Charentais still allows the first and second batches to be distilled.
