Koval Distillery in Chicago has earned a reputation as a true innovator amongst the craft distillery crowd. This four-grain whiskey is unusual in its class because it features no corn in the mash bill, and is instead distilled from a bill consisting of oat, malted barley, rye, and wheat. The grains are all sourced from a local and organic farmer’s collective. The spirit is aged in new oak barrels from Minnesota with a heavy char. The resulting spirit is complex and well-integrated with a spicy, savory nose and toasty cereal finish.
