Amarone della Valpolicella Classico DOC is a dry red passito wine produced in Veneto that traces its origins back to the fourth century AD, where it was produced as a wine made from dried grapes and called Acinatico. It later took the name Recioto, initially a wine with a sweet flavor that over time, becoming more bitter, was called Amarone. The production area includes the piedmont strip that runs from the province of Verona to the border with that of Vicenza. The grape varieties used are Corvinone (50%), Corvina Veronese (45% to 95%), and Rondinella (5% to 30%), and they grow in an area with a mild climate and not very rainy. The area is protected by the Lessini mountain range, and the vineyards face south, benefiting from a favorable climate. The soils are calcareous and of volcanic origin, which influence the varying water supply to the vines during growth. The unique winemaking process involves a period of drying of the grapes, followed by the final maturation of the wine, first in oak barrels and then further aging in glass bottles. It is precisely this drying of the grapes that gives this wine its characteristic passito flavor, thanks to the high concentration of sugars that, after transformation into wine, give rise to its typical flavor, completely dry and bitter.
