This mezcal captures the essence of ancestral mezcal methods: agaves are hand-ground instead of by tahona, and distilled in clay pots versus copper. Tio Rey’s Ensamble batches are unique field blends of agave varietals, meaning the blend starts in the roasting process; there is no blending of spirits after distillation.
