Soft pressing and vinification in an autoclave according to the Charmat or Martinotti method at a controlled temperature of 15°C. The free-run must obtained is kept at low temperatures until the secondary fermentation, which takes place in an autoclave. Typical aroma reminiscent of green fruit. Light yellow color.
