Mezcal Unión El Viejo is a clear, silver-hued mezcal produced by a union of Oaxacan families under the guidance of Master Mezcalero Pedro Hernandez.
Under the Unión label, various producer families contribute to individual, hand-crafted batches of Unión mezcal. El Viejo, “the old man,” is the elder and rarer counterpart to its younger sibling, .
El Viejo is created from two types of agave—farm-raised sprat (also known as espadín), and tobalá, a wild bush known as King Agave. Tobalá is only found at high altitudes, matures for up to 14 years, and can generally only be located on foot or by donkey.
