El Jolgorio Pechuga Mezcal Joven is produced from mezcaleros Valentín Cortes and Gregorio Martinez Jarquin in Santiago Matatlán, Oaxaca. The Espadin agave is harvested at ten years of age, pit-roasted, crushed, fermented in the open and double distilled. The distillation process is quite unique, they use different fruits and add the breast of a turkey rooster into the still. The turkey breast doesn’t impact the mezcal as one would think, it just adds some complexity to the mezcal formula.
